Oooh! I love them when they're that ripe. Just a little sugar and the biscuit recipe is fine. The recipe above was intended to show how to do cobbler without sugar for the diabetics (substitution).

I'd have used vanilla sugar, just because I love vanilla and peach together. The vanilla really highlights the peachiness of peach for me. One of those cooking alchemy things, I guess.

But your mother's version makes me envious that I won't get to have any.
