I ended up doing none of the above- instead, my my mother suggested I let her make the cobbler, since was quite strong enough to do the painting/sanding that was otherwise on my schedule. I think she just cut them up and put a bit of brown sugar and cinnamon in, and her own version of a drop biscuit recipe on top, but w/ nothing else added. There in the oven now, and very juicy, so it's probably as well no more liquid went in.

You almost need a fork to eat the peaches even raw, but they are very, very good. So much better than store peaches.
